Today on the Cooking in Sanity project I made Onion Soup. Onion Soup is one of my ultimate favorite soups. Caramelized onions are to die for – cooking them slow and gives them an amazing sweet and also savory flavor that is perfect in a soup. Here’s how I made the soup:
The soup was so simple to make, but the few ingredients that were in it have such powerful flavors that it tasted like a much more complex soup than it actually was. I also served my soup with a round of toasted baguette and shredded Swiss cheese which only made it tastier – the cheese was nice and mild to balance the sweet onions and the baguette was delicious after soaking up the broth. I definitely be making this again soon!
