The Cooking In Sanity Project: Leek and Potato Soup, Potage Parmentier

Hey everyone!

Lately it’s been super cold here in Georgia, so I decided to make soup today on the Cooking in Sanity Project.  Soup is one of my favorite meals to eat during the winter because it’s easy and simple to make, and there are so many different types of soups that it never gets boring.  Today I made potato leek soup, a classic and incredibly simple soup that is also delicious.  Here’s how I made it:


The soup was very simple to make and mainly consisted of chopping ingredients up and putting them in the pot to cook.  Potato leek soup is a new favorite soup of mine because it’s light, simple and tasty. 

The full recipe can be found in Mastering the Art of French Cooking (2 Volume Set). I think every good cook deserves to have a copy of Julia Child’s masterpiece in their kitchen.
