The Cooking In Sanity Project: Fish Filets Poached in White Wine, Filets de Poisson Poches au Vin Blanc

Hey everyone!

Today on the Cooking in Sanity project I decided to make fish poached in white wine.  This recipe was very simple to make and, although I am not the biggest fan of fish, ended up being delicious.  The fish had a delicate flavor that was very refreshing.  And don’t worry – the alcohol content from the wine cooks out by letting it poach!  Here’s my video on how I cooked it:





The full recipe can be found in Mastering the Art of French Cooking (2 Volume Set). I think every good cook deserves to have a copy of Julia Child’s masterpiece in their kitchen.

This recipe was a perfect example of how some conversations surround a dish.

Dad: What's Lizzie making today?

Mom: Fish.

A frown appears on Dad's face.

Dad:  How many fish recipes are in the book?

Mom: It's a pretty short chapter, only 12 master recipes. There are two lobster recipes and a handful of mussel recipes...

At this point Dad has a slightly disgusted look on his face.

Dad: I will not be eating any shellfish.

Mom: Not even a little taste, for the sake of your daughter?

Dad: For the sake of my daughter, no, not even a taste.  I don't eat shellfish because they are not healthy.

Mom: Well, we'll buy healthy shellfish.

Dad shakes his head no.

After Lizzie cooked the poached fish, mind you this is fish and not shellfish, I asked Dad to try a bite.

Mom: Try a bite of the fish, it's delicious.

Dad carefully considers his response.

Dad: I'll try some later.

Dad dodged the first fish dish.  Funny guy he is. ;-)
